The world may be shrinking with the speed of communication, but logistical and financial hurdles to attending a culinary training campus are obstacles that continue to challenge students. There has to be another way. The other way is distance learning.
Now students wishing to study vegan cuisine may do so whereever they live in the world, providing they speak and write English, have internet access, and have use of a digital camera. Vegan Cuisine for the Commercial Kitchen provides online instruction with a downloadable syllabus, demonstrations, and the opportunity for instructor feed-back and coaching. Class times are flexible. Students read the syllabus and additional textbooks, watch demonstrations, and then follow step-by-step Practice Set instructions to make dishes using supplied recipes, take pictures and taste finished dishes, then email requested information to the instructor.
Within the student's own kitchen, on the student's schedule, culinary skills and techniques are introduced, practiced, and refined. Practice sets are returned to the instructor via internet or the postal system for evaluation and guidance. Each lesson's assignments are evaluated with personalized comments and suggestions given by a qualified culinary instructor. Questions and answers happen by email. Culinary instructors are all members of the American Culinary Federation and certified with the ACF as Executive Chefs and/or Culinary Educators.
Most lessons include recipes developed specifically for use in the course. These are given in two volume amounts: 6-8 servings, and 50 servings. Each lesson requires approximately 10 hours to complete, including reading, viewing of demonstrations, practice of skills in the kitchen, and writing brief reports to be sent back to the instructor accompanied by digital pictures.
